Canning Dried Asian Pears Work Setup - 3 This shows our work setup. On the right Paul will peel the pears using a very efficient peeler. The washed pears sit in front of him for easy access. A cookie sheet under the peeler catches the peels and a bucket sitting on the floor is for the peels when they get to be too many. Next to the peeler is a cutting board where Paul will cut the pear in half and trim the ends. Bernice has a tray to work on in front of her. She will pick up the trimmed halves to work on in her tray. In front of her is a bowl of clear water to rinse her tools when needed. In front of her tray is a bowl of cold water with some salt in it where she puts the finished pear halves. The salt water will slow the browning of the pears.
