We have tested the leathers in the dehydrator and determined they are sufficiently dry. Remove them and while they are still warm begin to lift the leather from the tray. We use a kitchen (non sharp) knife to lift up the edge so we can pull the leather free from the tray. The dark spots are some small clumps of cinnamon. That is not a problem.
