We place a plastic tarp under the table to protect the floor. We both work on the process. Paul sits on this side. The apples to be worked on sit in the middle. He peels them and quarters them. They then go into the big pot on the left in cool water with a little salt. Bernice sits on the other side and cuts out the core and places them in the big pot on the right. It also has salted water. The salted water prevents discolorization. Both side have cutting boards.
