Step 13, Fill the Jars

The apple butter is sweetened and spiced, now is the time to begin filling up the jars. We use a two-cup measuring cup to fill the jars. Fill the jars to within a 1/2-inch of the top. We use a cloth towel to handle the hot jars. My measuring cup has a hooked handle so we can hang it on the side of the pot while we work on the jar after filling. After that Bernice then wipes the rim. With a clean damp cloth to remove any spilled sauce on the rim. If the rim of the jar has sauce on it you may experience a sealing failure. We use a damp cotton cloth for this.
