Canning Berry Syrup Recipe

2 Cups Prepared Blackberries or Blueberries
Prepared means washing, removing stems, trash,
   overripe and under ripe berries.
Crush enough to fill air spaces
3 Cups Sugar
6 Cups Water
2 Tablespoons Lemon Juice
Above will make about 2 pints of syrup

(Double quantities if desired)

Canning Berry Syrup Instructions

Combine berries, 2 cups water.
Simmer 5 minutes.
Strain to remove bulk.
Combine Sugar and 4 cups water, boil to 160 degrees.
Add berry juice to sugar syrup.
Boil 1 minute.
Stir in lemon juice.
Put quickly into jars leaving 1/4-inch headspace.
Clean rim and seal with rings.
Water bath in boiling water for 10 min for pints/quarts.
We use a steam canner. Time is the same.
Remove and set on newspaper to cool.
The next day remove rings and wash jars.
Store with rings off.
