Fill up the Jars

We use a towel to hold the hot jar and fill it with the hot nectar. We fill it up with a headspace of 1/4 inch. We use a 2-cup measuring cup to fill the jar. Our measuring cup has an open handle so it can hang on the inside of the pot after each fill up.
