Canning Beef Barley Soup Step 14, Fill the Jars and put on Two-piece Lids When the soup has the pearl barley tender we ladle it into hot quart jars using a two-cup measuring cup. If the jars are not hot you take a chance the glass jar will crack or break. Fill the jar leaving a one-inch headspace. Wipe the rim with a damp clean cloth and assemble the two-piece lid. Tighten well but not to you maximum strength. Set aside until you have seven quarts for a full pressure canner load.
