Step 8, Set Jars out to Cool

When the timing has been completed, move the canner off the heat and wait until the needle has reached zero. Test the weighted top to the vent. If steam emits on jiggling it, wait some more. Remember the jars are at 240 degrees so they will still boiling even though you take them out. Use the jar lifter being careful not to grasp the ring. We set them on a thick layer of newspaper with paper towels under the newspaper. The towel prevents the newsprint from staining the counter top. Set them far enough apart so they can cool. Allow to cool overnight. As soon as you have emptied the canner you can start to fill up the canner for the next bath.
