Canning Beets
Sort the Beets When we start to can beets we sort the beets by size. The larger ones, 4-5 inches in diameter, the medium ones, 2-3 inches in diameter and the smaller go into separate batches. This is because the boiling times will somewhat differ. Our batch here were mostly the same size so they all went in together. The tops have been cut to about 1 inch and the roots have not been cut. Any further cuts would cause excessive bleeding at this time.
