Step 7, Cover Peaches with Syrup

Cover the peaches with boiling hot syrup leaving a half-inch head space. It takes 1 to 1 1/2 cups of syrup to fill a quart jar. We do this immediately to prevent discoloring. I use a two-cup measuring cup to fill jar with syrup.
