Step 11, Put in Canner

As each jar gets filled and lids and rings screwed on, place it on the rack of the steam canner. Water should be hot but not boiling. Bernice and I use a water steamer. Put the cover on and begin timing when steam appears and forms a column of steam 8 inches long. It saves water, time, and heats faster. See the tools we use for description of the steamer. With the steam canner you need not have a completely full canner.

If you use a water canner add water when filled with jars to cover the jars 1 to 2 inches. Put cover on canner when completely filled. You may can less than a full canner if you add jars filled with water to fill up empty holes. Begin timing when boiling begins.
