Step 7, Heat Jars

When the volume of the vegetables has been reduced enough we begin to heat the jars. We put them into a shallow pan with an inch of water a apply heat. You must not put hot sauce into a cold jar or breakage can occur. We are using pint and 1 1/2 pint jars for our tomato sauce this day. These are Atlas Canning jars. Before putting them the pan check for any flaws in the rims. Discard any that have chips in the rim. Non canning jars will present you with some breakage as the rims do not have a wide rim and also have thinner glass.
