12 Steps to Canning Tomato Sauce Step 9, Fill Jars When the jars have been heated fill the jars. Fill to a half inch of the top for head space. Wipe the rims with a clean damp cloth. Apply the two-piece lid and ring and tighten the ring. When you have completed a full pressure canner set of jars place them into the pressure canner. The pressure canner will hold 9 pints, 8 1 1/2 pint jars or 7 quarts.
