Mix Tapioca We now will start to prepare the Mapo Dofu sauce to be placed on top of the rice. We put perhaps 3-4 heaping tablespoons of tapioca starch in a glass. We then add water and mix it up with our chopsticks or spoon. This starch will be used after the Mapo Dofu sauce is finished to thicken it for use by your guests. We always have more than enough so we don't run out at the critical time when needed.
