Mix Tapioca

We now will start to prepare the pork sauce to be placed on top of the noodles. We put perhaps 3-4 tablespoons of tapioca starch in a glass. We then add water and mix it up with our chopsticks or spoon. This starch will be used after the pork sauce is finished to thicken it for use by your guests. We always have more than enough so we don't run out at the critical time needed. You most likely will need to stir it again when used. While we used tapioca starch, use any starch you prefer.
