Making Almond Chewy Cookies 1. Chop Almonds We use our handy nut chopper to chop the almonds into small pieces. We use raw unsalted almonds with the skins on. You could also use blanched, raw and unsalted almonds if you prefer. The bottom part of the nut chopper has markings to tell you the amount chopped. We want 3/4 of a cup of chopped nuts.
