23. Out to Cool

Here you can see the cookie sheet as it came out of the oven. We set the sheet on a tile to let it cool a bit. In about 2-3 minutes when they have cooled a little remove them using a spatula and place the cookies on a wire rack. We use the edge of the spatula to cut any cookie touching any other cookie. If they have cooled enough they will be easy to remove. If they are too soft wait a little longer.
