Using the Gingerbread Man Cutter

We press the cutter into the dough firmly. Then as you see Bernice doing here, peel away the excess dough around the cutter to free up the cutout. The dough peeled away we put into a bowl to be used again in the next batch. After all the men that can be taken from a single rolling we knead up that dough and add it to the big bowl of dough and get ready for another rolling session.
