32. Set to Cool

After the baking has completed, set the pan on a wire rack to cool. We arrange the set-aside morsels on the top of our cheesecake. After 15 minutes run a knife around the edge of the cheesecake. Cover the cheesecake and refrigerate for at least 6 hours or overnight. When you serve the cheesecake you could optionally put some caramel ice-cream topping on the cheesecake.
