When the center has almost set up remove the cheesecake from the oven. Set it on a wire rack to cool. When the worst of the heat has dissipated put the cheesecake in the refrigerator for about 3 hours to completely cool. When completely cool remove. Using a non sharp table knife, run the knife along the side to free the cheesecake from the side of the springform pan.
