Step Eight, Blend Milk Mixture into Eggs

After simmering the pudding for the five minutes take it off of the heat. Spoon some of the hot pudding into the egg mixture. That is to equalize the heat difference. We put in slowly about 12 tablespoons of the pudding into the eggs. We stir the eggs as we add the pudding. This will prevent curdling when you add the eggs to the pudding.
