21. Install Shield

Place a crust cover on the pie dish. This will help prevent the edge crust from getting too done. You could also use a 2 inch strip of aluminum foil to do the same job. Close up the oven and let the pie bake for another 15 minutes. The middle will still be slightly fluid but will set up when it cools.
