Making Toasted Cheese Sandwiches

8. Grilling

We place a large frying pan cover over the two sandwiches and apply heat. The cover will warm up the cheese to melt as it browns the bottom buttered slice. A gentle hand to the top of the cover will indicate when it gets warm enough to take a look to see if the bottom of the bread is brown enough to turn over. We remove the cover and lift the sandwich with a spatula to take a peek.
