Transfer to a Large Pan

When the syrup has reached the 248 degrees we pour it into a large pan. I also had warmed up the pan so when the syrup is poured into it, it doesn't cool too fast. We need a large pan because the walnuts will be added next to the syrup. We put the pan on a tile so as not to damage the counter top.
