Making Potato Soup
Boil Eggs We start off by boiling the eggs. We put the eggs in cold water to boil them. We turn the heat up high and reduce the heat when it begins to boil. Although the recipe calls for 6 eggs we have put in 12. We will use the other eggs for other things. Having 12 in our pan reduces the eggs bouncing in the boiling water and cuts down on cracking. Cover eggs with at least 1/2 to an inch of water. Let simmer for 2 minutes. Turn off heat and cover. After 10 minutes they will be ready. Very fresh eggs will be hard to peal.
