Step 5, Cooking Pea Mixture

You really need to stir quite often as the peas will quickly settle to the bottom. To keep down the foam, a lot at the start, it helps to put butter, (spelled margarine) on the top of the pot. We put in about an 1/4 of a stick for our soup. This will suppress much of the foam. Continue to simmer until the peas are soft.
