Oyster Mushroom

Pleurotus ostreatus - Identification marks: (1) The gray to bluish gray shelving caps. (2) The gills often fused to the stalk. (3) The fleshy consistency. (4) Habit of growing on stumps and logs of hardwoods such as elm and cottonwood. Edibility: Edible, but some variants in irrigated areas of our western states are reported to be unpalatable.
