As the cooking progresses and the apples get softer the apple's skins begin to come loose. Bernice keeps a close eye on any loose skins and removes them with a pair of tongs. If your apples easily release their skins, removing them at this time will make things easier later. Don't get too obsessed with this step if the skins don't come off easily.
