Into the Canner

The filled jars now go into our steam canner. You can also use a water bath. Both work well but for us the steam canner makes our job easier not having to lift the heavy water bath. If you use a water bath make sure the jars are covered by 1-2 inches of water. If you use a steam canner a 1/4 cup of white vinegar added to the inch of water will prevent the discolorization to the aluminum steam canner.
