Step 11, Check Pressure on the Canner

Timing starts when the pressure reaches 10 pounds. If your altitude exceeds 1000 feet you must use higher pressures to reach the 240 degrees F that is required to kill botulism and bacteria. Keep the temperature adjusted to keep the pressure at the required level. It is not a good idea to go away for the 85 minutes required. Check on the pressure from time to time. Make sure it is not too low or high.
