Peach Work Pan and Knife, Tool 4

This pan we use to put the cooled peaches in from the cold water for Bernice to slip skins and cut into halves. She prefers to use this short knife shown for this work. When the pan gets too full of peach skins I remove it and clean it for her for the next batch. We will can perhaps 80 - 90 Quarts in a day working together.
