Step 8, Dice the Beets

After Bernice peels the beets Paul will dice the beets into about 1/2-inch cubes. But pick your own size. As we dice them we fill the pint jars within a half inch of the top. Pack them somewhat but don't mash them. When we have enough to fill the steamer or water bath pot we move on to the next step.
