Step 12, Let Jars Cool

Place the jars on some newspapers to cool. We place paper towels below the newspapers so the newsprint will not stain the counter top. Sit back and hear the lids make their satisfying pop as they cool and seal. The next day remove the rings and wash the jars in warm water to remove any vegetable material. Store in a cool dark area with the rings off. Leaving the rings on will cause much trouble removing the rings later. Put rings on as you open jars that will not all be used.
