Put Pork in Bowl

The pork now has been cooked and broken up into small pieces. We will put the pork into a bowl double lined with paper towels to soak up grease. After a bit we will then remove the pork with the paper towels and reline the dish again with fresh towels and put the meat into the bowl again to soak up any remaining excess grease. This step will be done before the guests arrive and placed covered in the refrigerator to be used when making the Mapo Dofu sauce that is put on the rice.
