Mapo Dofu - Step 12

Drain Tofu

We use medium Tofu for our Mapo Dofu. Opening the container we drain any liquid we can. Then we place it on a board and proceed to slice it using a sharp knife. We first slice it sideways three times then slice from the top into 1/2 inch cubes. We will drain any additional liquid after the slicing.
