Store Garlic and Ginger After chopping both the garlic and ginger we set it aside for use later when we prepare our dishes. We cover it and put it back in the refrigerator. If we are preparing a number of Chinese dishes needing garlic and ginger we will do enough for each of the dishes. We will mix the garlic and ginger for use when preparing the dishes. Noodles, Mapo Dofu, beef broccoli, will all need this mixture. The amount of this mixture used is not critical.
