Chinese Cooking Tools Cutting Board, Knives, and Spoons Much of Chinese cooking requires a board for chopping, dicing. slicing meat, vegetables and seasonings. Garlic and ginger needs to be fresh and chopped fine for many dishes. Remember most dishes will be eaten with chopsticks so all ingredients need to be bite size. Generally no knives will be available at a Chinese dinner. Good sharp knives will make the job easier. Also a meat cleaver will greatly facilitate the job. We will show and talk about that later.
