23. Set to Cool

When the baking has finished, remove the pan and set it on a wire rack to cool. After it cools completely, run a table knife down the sides and corners to free the edges. We then turned the pan over on top of a flat surface. With a few taps on the bottom of the pan the contents will drop onto the flat surface. Ours did. Remove the pan and turn the bars over so the true top is up.
