Step 2 - Cracking the Eggs

We use our old Mixmaster that has been in the family for over 50 years. Paul has had to replace the brushes and it still does the job. Here we break the eggs into the big mixer bowl. Remember we doubled the recipe so we have 16 eggs in the bowl. Normally we use large eggs but if the mediums are on sale we will use them but add an extra egg . In our case we would use 18 eggs and a single recipe would use 9 eggs.
