Step 7 - Prepare the Pan We assemble the custard dishes. With a double batch we have added some cups to our complement of custard dishes. The pan is a pan left over from the days we used to do our own developing of photos. it makes an excellent pan for our custard. We put an inch of cold water in the pan to help stabilize the temperature while in the oven. That way the otherwise very hot pan will not influence the heat on the custard dishes.
