Making Crisp Cornmeal Scones 18. Cutting the Dough We trimmed a little from one side and began to cut the dough using a kitchen knife into about 2 inch squares. Using our knife again we slightly flattened some of the sides of some squares. The trimmed pieces we reformed into a ball, flattened it and cut it into two odd size squares.
