Step Two, Dust Hands

At this point we assume you have mixed your dough for the crusts and now need to get it into or on the pie tins. I then I dust my hands with flour from the sifter. It puts down a fine even layer of flour and works just fine for that purpose. Using my dusted hands I then gather up the ball of dough and press it into a tight ball. Then use the ball to clean up any dough that remains in the bowl. Don't knead it more than needed, just enough to get it into a tight congealed ball.
