Sir Up the Mixture

We now clip the candy thermometer on the side of the pan. Nake sure the bottom is in the mixture but not touching the bottom otherwise false reading may ensue. We stir the mixture to make sure the sugar in not dry on the bottom. Then we will apply the heat at the highest setting. Do not stir any more after that.
