Stirring the Walnuts

While the mixture heats to the firm ball stage we will stir the walnuts about every 7 minutes. They will be in the oven for about 20 minutes. This oven treatment will do two things, dry the out and warm them up so the syrup will not cool too fast when they are added to the syrup.
